Instructions:
Drain the lentils. Add to a pot.
Add the potatoes, and the stock. Cook on high heat for 10 minutes.
Add the carrots, sausage, onion, and cook for 5 minutes.
Add the rest of the ingredients. Stir well. Cook for another 20 minutes.
Serve hot with parsley on top.

Colombian Chicken Veggie Rice
If you ever visit Colombia, you cannot but avoid this beautiful yet simple rice dish. It contains a meat of your choice and lots of healthy veggies.

Cooking Time: 40 Minutes
Ingredients:
1 cup cubed turkey breasts
1 cup cubed carrots
1 cup cubed potatoes
1 cup chopped scallion
1 cup chopped tomatoes
Black pepper to taste
2 cup rice
2 green chilies, chopped
Salt to taste
2 tbsp tomato sauce
1 red onion, sliced
Fresh parsley, chopped
3 tsp soy sauce
2 tbsp olive oil
